1. add the vegetables and sweat without coloring.
2. Add the fish bones and sweat for 3 minutes.
3. Add the white wine and enough water to cover the. , bring to a boil then
simmer. Skim off the scum and add the herbs, spices and lemons. Simmer for
30 minutes.
4. Remove from the heat and strain
NB
FOR BETTER FLAVOUR THE SAUCE CAN BE REDUCED BY HALF.
