Sweet & Savoury Waffle Class

Healthy spinach waffle

INGREDIENTS
* 1 and 1/4 cups (180g) whole wheat flour
* 3/4 cup (108g) all-purpose flour
* 2 tsp baking powder
* 1 tsp salt
* 80ml vegetable oil / butter
* 3/4 cup (177ml) milk
* 2/3 cup (156ml) water
* 2/3 cup (50g) parmesan cheese (any other cheese works also)
* 2 stalks of spring onion , finely chopped
* fresh coriander finely chopped
* 1 cup spinach (about 1 large handful), chopped
* ½ tsp black pepper, finely diced
* oil / butter for brushing
Method
1. In a medium-sized bowl, mix the flour, baking powder, and salt together. In large bowl, mix
together oil, milk, and water. Add the dry ingredients to the wet ingredients and stir until
everything is well incorporated.
2. Fold in the cheese, spring onions , coriander, spinach, and black pepper. The batter should
be fairly thick.
3. Brush the waffle iron with cooking oil and heat it up. Pour some batter into the waffle iron. Be
careful not to pour so much batter that it fills up the iron to the outer edge. If the iron is overfilled,
the edges will not be cooked as well.
4. Cook the waffles for several minutes or to your desired color and crispness.
5. Let your waffles cool and serve with some green coriander chutney or just eat them plain!

Belgian chocolate waffle

Ingredients

• 180 g all-purpose flour


• 1 tsp baking powder
• 1⁄4 tsp baking soda
• 100 g castor sugar
• 220 ml warm milk
• 60 g dark chocolate melted
• 45 g fresh cream
• 110 g butter
• 1 tsp vanilla essence
• 1 tbsp vinegar
• 1 tbsp cocoa powder

Method:
1. Mix the wet ingredients like warm milk, butter,sugar , vanilla essence, and dark chocolate.
Microwave for 30 seconds if required
2. Whisk together and put it aside.
3. Sift the dry ingredients together. Now, start mixing the dry ingredients
into the wet ingredients in batches.
4. Now, whisk in the vinegar. Batter is ready. Pre-heat the machine at 165
degrees for 5 mins. Apply butter on both the sides. Bake for 5-10
minutes. Remove on a cooling rack.
5. Trim the edges and serve it with your favorite toppings.

Topping on waffle

Chocolate Sauce for Drizzling on top

INGREDIENTS
• 2 tbsp milk or heavy cream
• 1⁄4 cup dark chocolate compound
METHOD
1. In a pan, heat cream or milk until it simmers. Add dark chocolate. Mix immediately and pour
over waffles as shown in class.
Savoury cheesy corn waffle

Ingredients

1 cup all purpose flour


¼ cup whole wheat flour
1tsp baking powder
¼ tsp baking soda
½ cup water
¼ cup milk
¼ cup chopped onions
¼ cup sweet corn kernels
¼ cup grated cheese
40 ml oil / butter
½ tsp sugar
½ tsp salt
1 tsp Red chilli flakes
1tsp mixed Italian herbs

Method

1. In a mixing bowl add all purpose flour,whole wheat flour, baking powder, salt, sugar,red
chilli flakes and mixed Italian herbs.mix well
2. Add milk and water,make a batter that is not too thick.Add oil and fold in it.
3. Next add grated cheese,chopped onions, sweet corn kernels and fold them in.
4. Meanwhile heat the waffle maker and once it is ready, pour a big spoon of batter at the
center, spread it out a little.
5. Cook it until it’s fluffy and crisp. Remove it onto a plate and repeat the process with the
rest of the batter.
6. Serve hot with ketchup /chilli tomato sauce/ green chutney with additional cheese on top.
Basic vanilla waffle / rainbow waffle

Ingredients:
1 cup all purpose flour
2 tbsp sugar
1 tbsp cornflour
1 tsp Baking powder
¼ tsp baking soda
Wet ingredients
½ tsp vanilla essence
1 tsp lemon juice
1 cup milk

Method:
1. In a bowl add all the dry ingredients-all purpose flour,sugar, baking powder , baking soda
& corn flour Mix well
2. In a separate bowl whisk butter and add vanilla essence
3. Add the dry ingredients mix well adding milk little by little mix till the the batter is smooth.
4. Add lemon juice in the end
5. Preheat the waffle maker and once it’s ready,pour the prepared batter close the lid of the
waffle iron.
6. Cook it until it’s fluffy and crisp. Remove it onto a plate and repeat the process with the
rest of the batter.
7. Serve hot with your favourite toppings
Rainbow waffle

The recipe will be same as vanilla waffle


● You will divide the batter in 4 different bowls
● Add four different imulsions to it …. like mango, pista, strawberry, blueberry.
● And pour the batter on the waffle machine or silicon mould , in the way shown in class.
