SUGAR CRYSTALLIZING

Sugar candy
lab report

Members :
Mind Sutinee , Nuk Arisara , James Khanathat , Bam Preeyapa (10-05)

Introduction :
We did this experiment to see the crystal of sugar, which crystallization is one of the properties
of sugar. The molecular form of sugar is C12H22O11 . This form is the form of disaccharide. Sugar
has same chemical components, but their arrangement of structures are different. Sugar has
carbon and hydrogen or the organic compound, thats why sugar is carbohydrate. Sugar that we
all usually eat is sucrose or table sugar. Moreover, sucrose consists of 2 monosaccharide
including glucose and fructose. There are many properties of sugar for instance, sweetness,
caramelization, solubility and crystallization. Becuase of sugar molecules be able to fit on the
taste buds of our tounge, that make us taste and know that something is sweet. The taste bud
pattern of each person effect sweetness. Caramelization is browning reaction that occur with
any type of sugar. When we heat it, water molecule will evaporate and leave behind carbon.
Sugar can dissolve in water the most because it has many hydroxyl group that can bond with
water. When the sugar reaches supersaturated state, crystallization begins.

Purpose :
To observe about crystalization of sugar which is one of the properties of sugar and learn how to
make sugar candy.

Hypothesis :

Rock candy crystal will grow after several days along the rope and clip..

Materials :
2 cups of sugar
empty cups
Flavor
Thread

1 cup of water
Food coloring
Sticks
Stirring rodBeaker

Procedures :
1. Boil 1 cup of water in the beaker.
2. Gradually add 2 cups of sugar.
3. Stir it until sugar dissolve.
4. When sugar all dissolve, cool them down a bit.
5. Tie the thread with the stick.
6. Attach paper clip at the bottom of the thread
7. Do not let the paper clip touch the bottom of the container.
8. Wet the thread and paper clip with water.
9. Cover the thread and paper clip with sugar.
10. Pour syrup all most to the top of cups.
11. Dip the thread with the paper clip dowm and make the stick hang on the top of
the cups.
12. After several day, crack the crystal that form on top.
13. When you get enough sugar crystal that you want, pour the syrup and take your
rock candy.
14. Enjoy your ROCK CANDY.

Result :
Analyzing result
1. Discuss the different properties of sugar and how these properties vary among
types of sugars.
Sugar has many properties. First, sugar molecules can fit on the taste buds on humans tongue
and that make people be able to taste sweetness. Each person taste buds pattern will effect
their taste of sweetness. Second, when we heat syrup and browing reaction happens, that is
caramelization. Water molecule will evaporate and leave carbon behind. Third, sugar has ability
to dissolve in water because it has many hydroxyl group that can bond with water. Last, when
we dissolve sugar in water until it is supersaturated and leave them, crystals are forming. That is
called crystalization which we were observing in this experiment.

2. What property of sugar is being observed in this lab?

A property of sugar that we are obserbing in this lab is crystalization.

3. Discuss the end product for each member of your group. How did they
compare in size, shape, texture, flavor?
James got the smallest crystal, it grew on the end of the clip and a little on the rope.James rock
candy is green with the original flavour which is the sweet one.Mind also got a small crystal but
more than James and she had vanilla flavor. Mind crystal were separated. One on the end of
the clip, one on the top of the clip, another one on the rope and a lot at the bottom of her glass.
Mind rock candy was light pink with vanilla flavour. Bam crystal was big but it stuck together only
at the clip but not on the rope.Bam rock candy is clear with no color. Nuk crystal was the biggest
and the most beautiful one.It was pink and the crystal shape look like a heart .The crystal tightly
pack on the clip and some crystal grew on the rope too.

4. Who in your group was the most successful? What might be the reason for
their success?
Nuk was the most succesfull one. She grew a lot of crystal, also it was a shape of hearth. We
think that she might cover thread and paper clip with a lot of sugar and that made Nuk was
succesful.

5. If you were to perform this lab again, what might you do differently?
Next time, if we have an opportunity to do it again, we will cover thread and paperclip with more
sugar and we might compare between brown sugar and white sugar.

Conclusion :
In conclusion, we were successful in growing rock candy. Rock candy is the product of
crystalization which is a property of sugar when we dissolve sugar in water until it is
supersaturated and leave it for several days, crystal of sugar will grow. In this experiment, Nuk
grew the most crystal and shape of crystal was like a heart. We think that migh because she
cover a lot of sugar on her thread and paper clip. The outcomes of everyone looked really good.
It was beautiful and sweet. Mind dropped vanilla flavor at the bigining of the experiment and that
made her rock candy smelled of vanilla. There were crystal grow at the bottom of Minds glass.
She took it out and the crystal was very beautiful. James grew not much of crystal, but he liked
it. Bam grew a lot of crystal on her paper clip, but none on her thread. Next time, if we are going
do the experiment again, we will cover the thread and paper clip with a lot of sugar and we will
compare the different of crystal between brown sugar and white sugar.
