For Pastry:

2 cups flour
teaspoon salt
4 tablespoon oil
6 tablespoon water

For Potato Stuffing:


5 medium potatoes
4 tablespoon oil
1 medium onion, peeled and finely chopped
1 cup green peas
1 tablespoon ginger, grated
1 hot green chili (finely chopped)
3 tablespoon green coriander (cilantro), chopped
1.5 teaspoon salt
1 teaspoon ground coriander
1 teaspoon garam masala
1 teaspoon ground cumin seeds

Oil for deep frying

Preparation

Dough for Samosa Pastry

1 Mix flour and salt in a bowl.


2 Add 4 tablespoons oil and rub until the mixture resembles coarse breadcrumbs. Slowly add
about 6 tablespoons water and knead the dough for about 10 minutes or until it is smooth.
3 Rub dough with oil. Cover it and set aside for 30 minutes or longer.
Potato stuffing for Samosa
4 Boil, cool and peel the potatoes. Dice it into 1/4 inch size.

Heat 4 tablespoons oil in karahi or wok in medium flame.

Lower the heat and carefully put the onion. Stir fry until golden brown in medium heat.

Add peas, ginger, green chili, and fresh coriander (cilantro). Add diced potatoes, salt and all
spices.

Mix and cook on low heat for 3-4 minutes. Do not forget to stir while cooking.
Making Samosa

Knead the dough again. Divide it into about 10 balls.

0 Roll it into flat round shape with about 5 inch diameter.

1 Cut it into half. Make the half into a cone by sticking seam together with a little water.

2 Fill the cone with about 2.5 tablespoons of the potato mixture.

3 Stick the top of the cone together with a little water. The seam should be about 1/4 inch (5 mm)
wide.

4 Repeat this again.

Cooking Samosa

5 Heat about 2 inches of oil for deep frying over a medium-low flame. (You may use a wok, Indian
karhai or any other utensil you seem fit)

1 When the oil is hot, carefully put in as many samosas as it fits. Fry slowly, turning the samosas
6 until they are golden brown and crisp.
1 Drain excess oil and serve hot.

Untuk Kue:
2 cangkir tepung
sendok teh garam
4 sendok makan minyak
6 sendok makan air
Untuk Stuffing Kentang:
5 media kentang
4 sendok makan minyak
1 sedang bawang, kupas dan cincang halus
1 cangkir kacang hijau
1 sendok makan jahe, parut
1 cabe hijau panas (cincang halus)
3 sendok makan ketumbar hijau (daun ketumbar), cincang
1,5 sendok teh garam
1 sdt bubuk ketumbar
1 sendok teh garam masala
1 sendok teh biji jintan
Minyak untuk menggoreng

Persiapan
Adonan untuk Pastry samosa
1 Campur tepung dan garam dalam mangkuk.
2 sendok makan minyak Tambahkan 4 dan gosok sampai campuran menyerupai remah
roti kasar. Perlahan-lahan menambah sekitar 6 sendok makan air dan uleni adonan
selama 10 menit atau sampai halus.
3 Gosok adonan dengan minyak. Tutup dan diamkan 30 menit atau lebih.
Kentang isian untuk samosa
4 Rebus, dingin dan kupas kentang. Dice ke 1 / 4 inch size.
5 Panaskan 4 sdm minyak dalam wajan karahi atau di api sedang.
6 Kecilkan api dan hati-hati meletakkan bawang. Tumis sampai berwarna emas di api
sedang.
7 Tambahkan kacang polong, jahe, cabai hijau, dan ketumbar segar
(cilantro). Tambahkan kentang potong dadu, garam dan semua rempah-rempah.
8 Campur dan masak di api kecil selama 3-4 menit. Jangan lupa untuk mengaduk saat
memasak.
Membuat samosa
9 Uleni adonan lagi. Membaginya menjadi sekitar 10 bola.
10 Roll menjadi bentuk bundar datar dengan diameter sekitar 5 inci.
11 Potong itu menjadi setengah. Membuat setengah ke kerucut dengan menempel
jahitan bersama dengan sedikit air.
12 Isi kerucut dengan sekitar 2,5 sendok makan dari campuran kentang.
13 Stick bagian atas kerucut bersama dengan sedikit air. jahitan harus sekitar 1 / 4 inci
(5 mm) lebar.
14 Ulangi ini lagi.
Memasak samosa
15 Panaskan sekitar 2 inci minyak untuk menggoreng mendalam atas api sedang-
rendah. (Anda dapat menggunakan wajan, karhai India atau pun alat-alat lain yang
Anda tampak fit)
16 Ketika minyak panas, dengan hati-hati menempatkan sebagai samosa sebanyak
cocok. Fry perlahan, memutar samosa hingga kuning kecoklatan dan renyah.
