Curried Rice

This recipe is for curried rice. It involves sautéing onions, garlic, ginger, curry powder and scotch bonnet pepper in oil. Curried Rice

Ingredients

2 tablespoons vegetable Oil


2 teaspoons ginger, grated
1 tablespoon Curry Powder
1 medium onion, chopped
1 stalk escallion, chopped
1 tablespoon garlic, chopped
1 whole scotch bonnet pepper
1 sprig thyme
1oz Coconut Milk Powder
3 1/2 cups water
3 1/2 cups water
400 grams Long Grain Rice
1 can Mixed Vegetables, drained

Directions
1. Heat Vegetable Oil in a skillet and use to saut ginger, curry powder, chopped onion,
escallion, garlic, whole scotch bonnet pepper and thyme.

2. Whisk together the Coconut Milk Powder, the water and salt and pour over the sauted
seasonings and bring to a boil.

3. Add the Long Grain Rice, stir well and bring to a boil. Lower the flame, cover and steam
for about 25 minutes or until the rice grains are tender.

4. Fold in the drained Mixed Vegetables using a fork. Cover and heat for a further 2
minutes.
