Brinjal Thoran - A different Thoran recipe using brinjal .
 
Ingredients:
Egg Plant/Brinjal(big) - 1 nos
(4 - 5 nos for small brinjals)
Turmeric powder - 1/2 tsp
Chilly powder - 1 1/2 tsp
Pepper powder - 1 tsp
Garam masala - 1/2 tsp
Grated coconut - 3 - 4 tbsp
Garlic pods - 2 nos
Cumin seeds(Jeerakam) - 1/2 tsp
Dry red chillies(Kollamulaku) - 2 nos
Onion - 1 small
Mustard seeds - 1/2 tsp
Curry leaves - A few
Salt - As reqd
Oil for frying
Method:
1)Cut brinjal to thin round pieces each about 1 cm thick.
2)Marinate the above with turmeric powder, chilly powder and salt. Keep aside for 10 minutes.
3)Heat some oil in a pan.
4)Fry the marinated brinjal pieces till brown. Drain and keep aside.
5)Heat 1 tbsp oil in a pan.
6)Splutter mustard seeds.
7)Add curry leaves and red chillies.
8)Add onions sliced lengthwise and saute well till light brown.
9)Add the fried brinjal pieces now.
10)Add garam masala, pepper powder and salt(only if needed).
11)Saute well.
12)Grind together grated coconut, cumin seeds and garlic pods to a paste and add this to the above.
13)Mix well.
:- Tastes great with rice and rotis.
Cabbage Masala Thoran is a tasty thoran recipe.
 Ingredients:
1. Chopped cabbage - 1/4
kg
2. Green Peas cooked - 50g
3. Shallots chopped - 1/4
cup
4. Coconut sliced into small
pieces - 3 tbsp
5. Desiccated fresh coconut
crushed - 1/2 cup
6. Urad dal - 1 tbsp
7. Dry Red Chilly - 4
8. Coconut Oil - 3 tbsp
9. Chilly Powder - 1/2 tsp
10. Garam Masala- 1/2 tsp
11. Turmeric powder - 1/2
teaspoon
12. Curry leaves - 1 spring
13. Mustard seeds - 1/2
teaspoon
14. Salt to taste
Method:
Mix cabbage with 1/2 tsp
salt. 
Heat the oil on medium heat
and add the urad dal and
mustard seeds and allow to
splutter. 
Add the sliced coconut and
onions and saute well. 
Add the cabbage, coconut crush, chilly powder, garam masala powder, turmeric powder,
salt, green peas, and curry leaves. Mix well and cook for some time and serve.
Vazhappo cherupayar Thoran - Tasty and Healthy thoran dish made using Banana
Flower and cherupayar.
 
Ingredients:
1 no Banana flower (Vazhappoo/Kodappan)
½ cup green gram (cherupayar)
1 tsp Cumin seeds
½ of one Coconut
A little Turmeric powder
1 tsp Chilly powder or a few Green chillies
Salt – As required
1 tbsp of Oil
1 tsp of Mustard seeds
2 – 3 broken Dry red chillies
A few Curry leaves
 
Method:
1)Clean the van payar well and get rid of the unwanted stuff from it.
2)Cook it separately with water in a pressure cooker and make sure u don’t overcook it.
3)Remove the first 3 – 4 outer covering of the vazhappoo and chop the rest very finely as u
do for thoran.
4)Add coconut oil and turmeric powder into the above chopped kodappan and mix well the
whole thing using your hands to remove the kodappan’s serum.
5)Place together the grated coconut, green chillies, cumin seeds and curry leaves in a mixer
bowl and run it once to make it into a coarse form.
6)Mix it along with the chopped kodappan mixture.
7)Heat oil in a pan and splutter mustard seeds and sauté dry red chillies and curry leaves.
8)Add the kodappan mixture and mix well.
9)Cover and cook on a low flame.
10)After sometime, remove the cover and add the cooked cherupayar into this and mix
well.
11)Continue cooking without the lid on, till done, making sure that it doesn’t get mashed.
Kovakai (tindora) (ivy gourd) Varuval - Tasty Mezhukkupuratti Recipe goes well with Rice and
Chappathi.
 
Ingredients:
Kovakkai (tindora) (sliced) – 1 cup
Onion (chopped) – 1
Garlic (chopped) – 3 cloves
Powder ingredients:
Chilli powder – 2 tsp
Turmeric – 1 tsp
Salt – as needed
Seasoning ingredients:
Mustard seeds – 1 tsp
Split urad dal – 1 tsp
 
 Method:
Heat oil in a pan and then add the seasoning ingredients.
Once the mustard seeds start to splutter add the onion and garlic.
Fry the onions till they turn golden brown and then add the chopped kovakkai.
Add the powder ingredients and simmer and fry till the kovakkai turns a little crispy and dry.

    Salt as to taste
    Pepper - 1 tsp
    Ginger - 1 small piece
    Garlic - 2 pieces
    Small Onion - 2
3. Oil - 1 cup
Method:
Cut Brinjal into round pieces of 1/4" thickness.
Wash and drain them in water and keep aside.
Grind the second items to a fine paste and marinate the brinjal pieces.
Keep it for sometime.
Heat oil in a pan and fry the brinjal pieces like you do for fish fry.
Mixed Vegetable Thoran is a tasty Thoran recipe, which is a combination of Cabbage, Snake
Gourd, Bitter Gourd and Carrot.
 
Ingredients:
Snake Gourd (Padavalanga), Carrot - 50 g each
Bitter Gourd (Pavakka), Cabbage - 50 g each
Large Onion - 1 medium sized
Coconut Oil - 1 tbsp
Mustard Seeds - 1 tsp
Urad Dal (Uzhunnu Parippu) - 1/2 tsp
Grated Coconut - 1/2
Salt - as required
Turmeric Powder - 1 pinch
Chilli Powder - 1 small spoon
Method:
Pour oil in a pan. When it becomes hot, splutter mustard seeds.
Add Urad dal and when it starts to become red, add the grounded coconut.
When the rawness disappears, add the thinly sliced vegetables along with salt, turmeric and chilli powder.
Mix well and cook covered until done.
