Samosa

For stuffing mix:

1. Boil 2 potatoes and a half cup of green peas in water. Mash the potatoes, when

done.

2. Put the mashed potatoes and peas in a bowl. In this, add the garam masala

powder (2 teaspoons), ginger-garlic paste (1 teaspoon), red chili powder (1

teaspoon), turmeric powder (1 teaspoon) and salt. Mix well together.

3. Heat 2 tablespoons of oil in a kadai on medium flame. Add cumin seeds (1/2

teaspoon) in it and wait till they splutter.

4. When you get the nice aroma, add the prepared mixture to it.

5. Stir-fry it for a couple of minutes so that the spices get cooked. Keep it aside in a

bowl.

Note – You may also use Poha (flattened rice) instead of potatoes.

For coating:

1. Meanwhile, get the all purpose flour (Maida – 2 cups), carom seeds (Ajwain – 1

teaspoon), melted ghee (1-2 teaspoon) and some water in another bowl. Knead

it into a dough.

2. Cover the dough for half an hour.

3. When the dough rises in size, make small ‘Puris/Rotis’ out of it, and cut them into

the half.

4. With the help of fingers, prepare samosa pockets as per your need.

For frying:
1. Stuff the mixture inside samosa pockets and close the sides with water.

2. Brush oil on the outer covering of samosas.

3. Preheat the system to 180°C for 5 minutes and place the samosa pieces in the

tray.

4. Let it cook for 18-20 minutes at the same temperature until you get the desired

color.

Note – While making this dish for kids, you may use avoid some hot spices. Find

4. Potato Wedges/French Fries

1. Marinate potato wedges with salt, turmeric powder (1/2 teaspoon), red chili

powder (2 teaspoons), cumin powder (1/2 teaspoon) & dry mango powder (1/2

teaspoon). Keep them aside for half an hour.

2. Preheat the Airfryer to 180°C for 3 minutes.

3. Place the potato wedges in frying pan and brush them with a little bit of oil.

4. Cook them for 15 minutes at the same temperature and shake them in between.

Note – The french fries recipe is pretty much similar to the recipe mentioned above.

Skip the spices except for turmeric powder while making french fries.

5. Cheese Balls

1. In a mixing bowl, get the boiled & mashed potatoes (2 nos.), turmeric powder

(1/2 teaspoon), red chili powder (1 teaspoon), black pepper powder (1/2

teaspoon), cumin powder (1/2 teaspoon), breadcrumbs (half cup) and salt.

2. Mix everything together.

3. Prepare concave patties with the mixture and place a cheese cube inside the

hollow space. Close the patty and make perfect round-shaped balls. Dust them

with cornflour.
4. Preheat the unit at 200°C for five minutes and put the greased cheese balls in it

for 10 more minutes.
