This figure shows the difference in viable cell counts as measured by colorimeter optical density at different alcohol concentrations for three yeast strains - Panga, Sanagaun, and a standard strain. Panga and Sanagaun maintained positive viable counts up to 13% alcohol concentration while declining at 15%, whereas the standard strain saw a decline starting at 10% alcohol.
