Olive oil comes from Olea Europaea tree. This tree is found mainly in the basin of the Mediterranean Sea, Asia, and Africa. It grows about 26-49 feet, has a twisted trunk, small white flowers, and silvery-green oblong leaves. It has an extensive root system.

Olive trees are very hardy, drought, disease and fire resistant. They can live for a very long time. The more the olive tree, the more gnarled and twisted their trunk appears. Olive are grown around the Mediterranean basin for centuries years old!

This tree produces a round of elongated shaped fruit called olives. Olives have a sweet fleshy layer on the outside and small seeds inside. They grow slowly and collect when they become a greenish-violet color. They have a naturally bitter taste. Olives grow well in hot weather. If the temperature falls below 14 degrees Fahrenheit, this may injure the olive trees.

Olive oil is squeezed out of olives. It is used all over the world. There are different varieties of olive oil: virgin, extra virgin, pure olive oil, pomace and lite olive oil. Their colors are different, due to processing. Colors can range from dark green to lighter, yellowish red. The high quality of olive oil has a strong dark green color, found in the virgin form. If the olive oil shows a lighter, yellowish hue, it probably pressed out of low-quality olives.

The benefits of olive oil are many, and it is used in many ways! Olive oil is used in many countries around the world!
