Full recipe down below 1 head romaine washed and cut Bread of choice (I used baguette) EVOO, S&P 1tsp Dijon mustard 2-3 brown anchovies 1 fresh egg yolk 1 large clove of garlic crushed to a paste Juice of half a lemon 1/2 Tbsp Worcestershire 1/3 cup Parmesan and more as you see fit EVOO to emulsify S&P to taste -Prep vegetables and grate 1/3 cup Parmesan -Toss cubed bread in EVOO and S&P, bake at 375 for 10 minutes. So, I'm going to make mustard vinaigrette for the arugula. It's a good combination. So, I have a quarter of a cup of vinaigrette. I use white wine vinaigrette or champagne vinaigrette, whatever you have. Lots of Dijon mustard, one and a half teaspoons. I use an egg yolk in it to emulsify it but if you don't want to use egg yolk, you can just eliminate it. Teaspoon of garlic, salt, half a teaspoon of pepper. Want this to be really well flavored. Just mix it together. Just give it a little whisk and I'm going to add half a cup of olive oil. So just add it very slowly. So emulsifies with the egg. It's kind of like making mayonnaise but it's going to be thinner. That's going to grow. Okay, so I'm just going to pour this over the arugula just enough so it's moistened. You don't want to load it down with dressing. Give it a little toss. So, just give it a taste. Make sure it's right. Oh, it's perfect. I love the peppery arugula and the mustard is great together. So, I've got a big platter. I'm just going to take the whole thing and just put it right in the middle of the platter and I'm just going to put things on top and you can really just do whatever you like but in this case, I decided I'm going to do prosciutto and burrata and just put them right on top sort of like ribbons of prosciutto. It's going to be great with pizza but then, what isn't great with pizza? Okay, next the burrata. So burrata is basically mozzarella with cream inside. How decadent does that sound? I'm just going to put it right in the middle and so this is serving for four. There are only three of us but it's enough for four and I'm just going to cut the burrata in half so everybody can have a half of burrata. See how creamy it is inside? So good and then just some salt and pepper right on the bratti want to be really well flavored Maybe a drizzle of olive oil. I mean, this is really easy and it's just so good.

So that's how you cook the eggs. This is how you peel them. You crack it on one side and the other and then you roll it on the board until the eggshell crackles and I find it's easier to peel. So for this salad, I like the eggs to be firm on the outside, just a little soft inside so they're soft boiled. I just think they have more flavor that way. For the Caesar salad dressing, I need another egg. Then I need two teaspoons of mustard. This has a lot of flavor and it's so good. It's really important that all the ingredients are room temperature otherwise never going to emulsify. I've got two teaspoons of garlic, anchovies. If you don't like anchovies, you don't have to use them but I do and I use maybe eight to ten anchovies, half a cup of freshly-squeezed lemon juice, Need salt and pepper, two teaspoons of salt, I have to admit, I love Caesar dressing. Half a teaspoon of pepper, just going to put the lid on and now like a mayonnaise what I'm going to do is I'm going to puree it and then slowly pour in the olive oil I'll show you Get all that mixed up and then one and a half cups of olive oil and just pour it in really slowly. You want this a really thick flavorful dressing. If you dump the whole thing in, it'll never happen. It'll just be a mess. An oily mess Okay, that's it. Last ingredient is Parmesan cheese and I need a half a cup. Just pulse it three times to mix it in and that's Caesar dressing which I just adore. So, I'm going to start with lettuce leaves. Caesar salad is classically romaine so that's what I'm doing but instead of chopping it all up, I'm just going to make a big platter with lots of leaves on it and all the ingredients. I'm going to just take the bacon that I have crisped up and just dice it, big dice. You want to be able to see all the ingredients. Okay, the next thing is blue cheese. Just big shards of it. Next is the gorgeous eggs I made. I usually like to drizzle some dressing on it but then I serve extra on the side in case somebody wants more. I brushed olive oil on 12 slices of baguette that I cut diagonally. Roasted them at 375 degrees for 10 minutes. Let them cool for a minute and then rub each one with the cut side of a garlic clove. It's the most incredible way to add flavor. So there it is, a deconstructed Caesar salad.
