These are Yukon gold potatoes. Then we're going to add a little bit of red onion which is also thinly sliced and I tell you they are quite fragrant. They're making me cry. I had to get these out of the house because they are so so tear inducing and strong. For this layer you don't need to have it as like as overlapped. You just want to have enough of the onion so that there's enough in the bite. And we're going to roll it Let's just start rolling So you got two slices of bacon there that you just go relax in the middle. And this is a thick cut centered cut. Okay. Has less little less fat on it. And then we'll take it right there. Good. Look at that pretty little rose. Beautiful. That looks. Yes. And then we're going to take it over here. Alright. I'm going to put it right there in our muffin tin. And it fits perfectly. I'm going to add a little bit of olive oil mixture with some Italian seasoning and salt and garlic. Just drizzle that on top of each one. Some rosemary and thyme. Oregano, garlic, salt and pepper. Spoon out a little bit of this Parmesan. Some grated Parmesan cheese. Just get that on the top. Little bit of snow cover there. Little bit of snow cover. Okay we're going to pop these in the oven. Oven set at 400 degrees. We're supposed to do it for 20 minutes and then cover it for another 30 but we're just going to watch it. So I did have it in the oven for 20 minutes. Uncovered and then I covered it with foil for another 30 minutes and they look really good and then I put some Parmesan cheese and I just cooked that another three or four minutes longer. Alright. Now they're cooled mostly. We're going to plate it. Cut into this baby. Cute. It really it really does. I mean the bacon is cooked well. Those potatoes are so thinly sliced. This is going to be Alright, here we go. Look at that. Oh good. Not too oniony? No. Not at all. Has a good amount of of saltiness but not overwhelming. And you know what I think would be a nice little dressing to add to this perhaps? What? Um because of the potatoes. I'm thinking a little bit of mustard. Ooh. But it's really good. The Italian seasoning, the garlic, the onion. This is really good.
