Cooking - Easy Greek Chickpea & Feta Salad Bowl with Lemon-Herb Dressing  Ingredients  1 can (15 oz) chickpeas, drained and rinsed  1 cup cherry tomatoes, halved  1 cucumber, diced  ½ red onion, thinly sliced  ¾ cup crumbled feta cheese  ¼ cup kalamata olives, sliced  2 tablespoons fresh parsley, chopped  2 tablespoons fresh dill or mint, chopped (optional)  Lemon-Herb Dressing 3 tablespoons olive oil  1½ tablespoons fresh lemon juice  1 teaspoon Dijon mustard  1 garlic clove, minced  Salt & pepper to taste  Directions  Make the dressing: In a small bowl or jar, whisk together olive oil, lemon juice, mustard, garlic, salt, and pepper.  Combine salad ingredients: In a large bowl, toss chickpeas, tomatoes, cucumber, onion, olives, and herbs.  Add feta & dressing: Gently fold in feta, drizzle
