Ingredients:  2 boneless chicken breasts 1 tomato, thinly sliced 4 slices fresh mozzarella cheese 10-15 fresh spinach leaves 1 teaspoon dried oregano Salt and pepper to taste  Instructions:  Preheat oven. Slice each chicken breast to create a pocket. Season with salt and pepper.  Stuff each pocket with tomato slices, mozzarella, and spinach.  Secure with 4 toothpicks to hold filling.  Heat olive oil in a pan. Sear chicken for 2 minutes on each side.  Transfer to a casserole dish (or cast iron pan).  Bake at 400°F (204°C) for 15 minutes, until cooked through.  Tips for Juicy Chicken: Season well, sear until golden, and avoid overcooking to keep it moist! Enjoy your delicious stuffed chicken!
