Just smear it on my face already. 😭🙌 One of the first recipes I ever shared on TBFS back in 2010, and after hundreds of cakes, it’s still my ride-or-die. The recipe 👇 White chocolate: 200g Whipping cream to be heated: 100ml Cold whipping cream: 200ml Vanilla bean pod/paste: 1 pod/ 1tbsp of paste Vanilla extract: 1 tbsp or less if you’d like Gelatin (bloom 200, powdered or in sheet): 2g Invert sugar or honey: 10g The process 👇 1. Begin by bringing the 100ml of whipping cream to a simmer with the vanilla bean paste and extract. Remove from the heat and let it infuse for minimum 30 mins. 2. Melt the chocolate using a bain-marie or the microwave. 3. Bloom your gelatin sheet in a very cold water for 5 min. If using powdered gelatin; add 2g of powder to 12g of cold water and let bloom in the fridge for 10min. 4. Add the bloomed gelatin and invert sugar in the vanilla-infused cream and reheat until it almost boils while stirring until the gelatin is fully dissolved. 5. Emulsify a third of the hot cream into the melted chocolate, then repeat with the remaining two-thirds. 6. After thorough stirring, add the 200ml of cold cream, stir and blend with an immersion blender so the gelatin can evenly be dispersed throughout the ganache. 7. Cover the ganache and let it set in the fridge for minimum 8 hours, this is mandatory since we’re using gelatin! 8. Before whipping, place the whisk attachment and bowl in the freezer for 5 minutes. 9. Take out the chilled ganache, then whip it with an electric or stand mixer starting at low to medium speed and increasing to high speed to make the ganache rise into a whipped ganache. A blueberry lemon cake with lemon cream cheese icing. First I started off by getting the zest off of the lemons. I used two lemons. I also squeezed the lemons to get the lemon juice and that should give you approximately half a cup of fresh squeezed lemon juice. I then mixed the sugar, butter, and lemon zest until it was really fluffy. I then added in my three eggs and I made sure they were at room tipper Last, I added in one and one fifth teaspoon of pure vanilla flavoring. For our dry ingredients, I first added in two and 1/ 2 cups of all-purpose flour, two and a half teaspoons of baking powder, a half teaspoon of baking soda, and a half teaspoon of salt. Now, going to add the dry ingredients in the buttermilk to the wet ingredients. Last, coat one cup of fresh or frozen blueberries with one tablespoon of flour and add your half a cup of fresh lemon juice. The flour helps the blueberries not sink. You're going to fold in your blueberries and then they're ready for the oven, preheated at 350 degrees. To start your icing, you're going to need one eight ounce of cream cheese and one stick of butter softened. Gradually add in your four cups of powdered sugar, one tablespoon of lemon juice, one teaspoon of lemon zest, and a half teaspoon of vanilla flavoring. Let your layers cool for 10 minutes you take them out and an extra 15 minutes before you apply your icing. This blueberry lemon cake turned out to be absolutely delicious.
