Here I’ll show how how it’s done, and boy is it good! You may substitute out the lamb cutlets for any other tender lamb cut or even beef. Meat: 500g lamb cutlets 1 tbsp rice wine 1 tsp salt 1 tbsp sugar pinch white pepper 1/2 tsp baking soda 1 tsp cornflour Mix the above ingredients in a bowl and set aside for 20min. Sauce: 1 tbsp light soy 2 tsp dark soy 1 tbsp rice wine 1 tbsp oyster sauce Mix above and set aside Oil 2 spring onion (cut) 3 cloves garlic (sliced) 15g ginger (sliced) Small half brown onion (sliced) 5g (about 1 1/2 tsp) freshly cracked
