Maxine Sharf on Instagram: "Seared scallion oil with eggs & buttered rice✨ Seared Scallion Oil:▪️3 Scallions, sliced very thin (2 oz)▪️2 Tbsp Minced Fresh Ginger▪️1/4 tsp Kosher Salt, plus more to taste▪️1/4 Cup Peanut Oil▪️2 tsp Sesame Oil▪️ Rice + Eggs:▪️2 Cups Cooked Jasmine Rice▪️1-2 Tbsp Butter, cut into small pieces▪️1 Tbsp Oil (any kind)▪️2 Eggs▪️ 🌱Vegan Modification: Sub in sautéed mushrooms for eggs, and plant based butter for butter 1️⃣ Place the scallions, ginger, and salt in a medium heat proof bowl. In a small saucepan, heat the peanut oil until it just starts smoking and reaches 400F on an instant read thermometer. Carefully pour the hot oil over the scallions and ginger. Mix and stir in the sesame oil. Let cool for a couple mins, then taste and add more salt if desired.
