This truffle pizza is a delicious combination of sweet and savory! Juicy pears, creamy ricotta, pecorino, honey and fresh black truffles take our best pizza dough to the next level.

There are a million different ways to make a truffle pizza, but I especially love the play on sweet and savory. 

I start with thinly sliced juicy pears and dollops of milky ricotta on our favorite chewy, crispy pizza dough. Top it with thick shreds of pecorino and bake it until bubbly and charred in spots. Shave a fresh black truffle over top (prepare yourself for the most incredible smell as the truffle hits the hot cheese), then drizzle generously with honey. 

This pizza takes me back to Italy, where I worked a wine harvest for 6 months. I remember the food being so simple and satisfying. At the fancy enotecas, I distinctly remember the smell of fresh truffles wafting past me. After dinner, we would always find a cheese plate with salty bites pecorino and honey.

This truffle pizza recipe is a combination of those memories, channeling the flavors and aromas of simple Italian country food. And it’s a pizza you can make from the comfort of your own home, with all of your favorite people. 

A fresh truffle is a big investment, but if you celebrate it with friends and family, it’s an investment I think is more than worth it. That said, don’t worry if you don’t have a fresh truffle. I share plenty of substitute options below.

what you need for this truffle pizza recipe:

  • artisan pizza dough
  • black truffles (or truffle oil)
  • pears
  • ricotta
  • pecorino romano
  • honey
  • olive oil
  • black pepper

how to make truffle pizza

  1. Make pizza dough (at least 6 hours ahead).
  2. Preheat oven to 500°F.
  3. Shape pizza dough into 12-inch circle.
  4. Spread surface with olive oil.
  5. Top with pears, ricotta and pecorino.
  6. Transfer to oven and bake for 5 minutes. Broil for 2- 4 minutes, until crust is charred in spots.
  7. Slice a fresh truffle over top (or drizzle with truffle oil) and drizzle with honey.
  8. Enjoy!

fresh truffle substitutes:

Chances are you probably don’t have a fresh truffle in your kitchen right now. If you have plans to get your hands on one, I hope you’ll make this recipe (or some of my other truffle recipes listed below)! 

You can totally make this pizza without a fresh truffle.

  • Truffle oil is the best substitute for pizza. Just make sure to drizzle it on after the pizza has baked; the heat of the oven will damage the delicate truffle flavor.
  • If you have truffle pate, simple spoon small amounts of it on the hot pizza.
  • You could also melt some truffle butter, and brush it on the dough in place of the olive oil. This will have the most mild truffle flavor, so I'd suggest also drizzling with truffle oil if you can.

Ingredients

  • ½ recipe artisan pizza dough (one 15 oz dough ball)
  • 1 tbsp olive oil
  • ½ pear, cored and thinly sliced
  • ½ cup whole-milk ricotta
  • ½ cup grated pecorino romano
  • 2 tbsp shaved fresh black truffle, from ½ oz truffle (can substitute 2 tbsp truffle oil)
  • 1 tbsp honey
  • freshly ground black pepper

Instructions

  1. Place pizza steel or stone in the oven and preheat to 500°F. Let steel heat up for a full 45 minutes.
  2. When oven is ready, generously flour a pizza peel and set aside.
  3. On a floured surface, flatten the middle of the dough ball into a large disk, leaving a thick 1-inch lip. Pick up the disk, and holding the thick edge, use gravity to shape the dough into a 12-inch circle. Lay on prepared pizza peel and adjust shape into a circle. Jiggle the peel to make sure the dough isn’t sticking; add more flour if it is.
  4. Brush dough with olive oil, leaving ½-inch border. Arrange pear slices evenly over the surface. Dot with ricotta cheese and top with pecorino. Slide pizza onto steel and bake for 5 minutes. Turn on the broiler and broil for 2- 4 minutes, or until crust is blistered and charred in spots.
  5. Remove pizza from oven, top with shaved truffle (or drizzle with truffle oil, if using) and drizzle with honey. Crack pepper over top. Slice and serve.
