Chubby Boys previously went viral thanks to an excellent breakfast sandwich out of Drip Collective in the West Loop. Now, the pop-up has a smashburger operation based in Logan Square’s Split Milk that proves they aren’t a one-sandwich wonder. The highlight is The Chubby Smash—a maximalist combination of sauces, cheese, and crispy onions that fuses into a balanced flavor bomb of saltiness, tang, sweetness, and spice. Pair it with a half-off draft beer during Spilt Milk’s happy hour, or a rotating cocktail like the Erykah Baiju.
Our favorite burger on the menu. Between the salty patties, cheese, bacon jam, bearnaise, cherry peppers, Chubby sauce (a creamy, sweet, and smoky concoction), and fried onions, saying this burger is “a lot” is an understatement. But instead of being overwhelming, everything between the two potato buns gives each bite plenty of complex flavor.

When we want something a bit more straightforward, we get this one. The crisp, thick pieces of Texas toast and potato chips add a nice texture to the beef, caramelized onions, and Chubby sauce.
After eating the above two items, we hypothesized that Chubby Sauce tastes good on anything. And this saucy fried chicken thigh with plenty of crunchy, craggy bits between Texas Toast confirms that—the scientific method wins again.
Truly Excellent: An 8 should be on your must-try list, because 8s are great. These spots are worth making an effort or crossing town for.
