Stir to combine. 2️⃣ In a separate bowl, mix the eggs and buttermilk. 3️⃣ Pour the wet ingredients into the dry and mix until combined, but do not overmix. You want to have some clumps in your batter which will make the panckaes fluffy. Fold in the melted butter. 4️⃣ In a large nonstick skillet or a griddle, heat a thin coating of oil over medium heat. Once the skillet is hot, add about 1/3 cup of the pancake batter and cook until little bubbles form on the surface and pop and the bottom of the pancake is golden brown, about 2 mins. (Lift the edge of the pancake with your spatula to check.) Flip and cook until the other side is golden brown and the pancake is cooked through, about 1 min and 30 seconds. Probably because the chicken is grilled over charcoal which gives it an extra layer of flavor. If I’m feeling lazy but want something that still hits the spot I will make this recipe in the airfryer or bake it in the oven. Any way you cook it this chicken will definitely be a crowd pleaser and people will be asking for the recipe. Please see mine below: Chicken Inasal Brine: 4ea chicken legs scored 12g Garlic 20g Ginger 75g Coconut Vinegar 1/2tsp Black Pepper 7g Salt 20g Lemongrass 1.5 Tbs fresh lemon Juice 1.5 Tbs fresh Lime Juice 22g brown Sugar 3Tbs soy sauce 1/2c sprite 1/4c chix fat infused with annato and garlic (recipe below) Make your paste and combine everything together. Marinate the chix overnight. I cooked the thighs in my @ninja airfryer for 25 min at 390 degrees flipping halfway through and brushing with more chix fat at the end. You can also bake in the oven at 375 degrees for 45 min. Baste your chicken with the chicken fat oil 3 times while it’s baking and turn on the broiler at the end to crisp up the skin. Pls note every air fryer is different so you might have to adjust cook time accordingly. Infused chicken Fat: 1C rendered chicken fat 8-10 cloves garlic lightly bruised 20g annato powder of 1.5 Tbs of annato seeds.
