Cheung Fun, those silky shrimp rice rolls we all love, can be made in just a few minutes with this simple rice paper hack. To velvet shrimp just add about 1/2 tsp cornstarch to 3/4 lb of shrimp, crack a little white pepper and a lil drizzle of sesame oil and cover in fridge for at least 30 min to an hour. Skip the tricky batter—just wrap your velveted raw shrimp with green onions, and white pepper in softened rice paper. Steam for 10 minutes, then cut and drizzle with chili oil and my homemade sweet soy sauce.
