A bold, rustic dish from the heart of Sicily. Sweet, savory, and tangy, and somehow even better the next day. If you’re looking for a classic Sicilian eggplant dish, this is it!

Ingredients:
🍆 1.5 lb eggplant, cubed
🌿 2 celery stalks, diced
🧅 1 yellow onion, chopped
🫒 1/3 cup green olives, pitted + chopped
🥄 2 tbsp capers, rinsed
🍅 2 tbsp tomato paste
🍅 1 lb cherry tomatoes, halved
🥃 1 shot white wine vinegar
🧂 1 tbsp sugar
🫒 Olive oil (for frying + sautéing)
🧂 Salt to taste
🌿 Fresh basil to finish

Instructions:
1. Fry eggplant in olive oil until golden. Set aside.
2. Sauté celery and onion until soft.
3. Add tomato paste, cook 1 minute.
4. Add olives, capers, tomatoes, vinegar, sugar, and salt. Simmer 5-7 minutes.
