Shrimp 2 ounces of Old Bay Seasoning 1 stock Green Onions 1 egg 1/2 cup Flour 1 Tbsp Baking Powder 1 Tsp Garlic Powder 1 Tbsp Paprika 1 Tsp Pepper 1/3 cup Water 1/2 cup Panko 1 cup shredded Coconut 1 cup Mayo 1/2 cup Sweet Chili Sauce 2 Tbsp Rice Wine Vinegar 1 Lime 2 cups Canola Oil For the Shrimp: Season with Old Bay Seasoning Then make the batter Add egg, flour, baking powder, garlic powder, paprika, pepper, water, and mix it all together. Mini Pesto Salmon Wellington @erin.eats.mtl Ingredients: Pesto: (you can make your own but make sure it’s thick) 1 cup packed basil 2 garlic cloves 2 tbsp pistachios or other nut 1/4 cup extra virgin olive oil Salt Pepper 1 lb salmon, cut into 8 equal size rectangles and patted dry 2 puff pastry sheets (I used @pepperidgefarm and rolled them out a bit) 1 egg Sesame seeds Directions: Preheat oven to 400°F. In a processor, combine pesto ingredients until paste forms. Spread a sheet of puff pastry on a parchment paper, sprinkled with flour. Top with salmon, making sure to separate the pieces. Season salmon with salt. Top with pesto and then with the second puff pastry sheet. Press down on puff pastry to delineate and separate salmon pieces. Use a knife to cut apart each piece and cut off the excess puff pastry if desired (but not too much, you need to be able to seal them). Seal each Wellington with either your fingers or a fork to be fancy! Make 2 small slits on top of the puff pastry with a knife. Brush with egg and sprinkle with sesame seeds. Bake for about 15-17 minutes.
