Ingredients: 2 tablespoons olive oil, plus more if needed 1 pound ground beef 1/4 cup finely chopped onion 4 ounces diced green chiles 1 teaspoon chili powder 1/2 teaspoon ground cumin 1/4 teaspoon garlic powder 3/4 teaspoon kosher salt 10 corn tortillas 1 cup refried beans (optional) 1 cup shredded Cheddar cheese toppings: cilantro, sour cream, salsa, guacamole or hot sauce (optional) Directions: Preheat the oven to 425 degrees F (220 degrees C). Line a rimmed baking sheet with foil or parchment paper and lightly coat with 1 tablespoon olive oil. Combine beef, onion, green chiles, chili powder, cumin, garlic powder, and salt in a medium bowl and mix until well incorporated. Wrap tortillas in a damp paper towel and microwave just until softened, about 30 seconds. Spread about 3 tablespoons beef mixture over half of a tortilla in a very thin layer that reaches to the edges Spread about 1 tablespoon beans onto the other half. Sprinkle all over with about 2 tablespoons cheese. Fold tortilla in half to make a taco; place on prepared baking sheet. Repeat with remaining tortillas, meat and cheese. Brush tops of tacos with remaining oil. Bake tacos in the preheated oven, flipping halfway through, until lightly browned, toasted, and crisp around the edges, 30 to 35 minutes. I have four inches in the middle. This is going to be really fun. So the first part, I'm just going to take those strips from the center. I'm going to add them around overlapping to kind of fanning them out. That looks neat. Just keep going. The way around. The first thing that I'm going to add is some cheddar cheese. So just enough to cover that bottom of the ring. And then I just made some taco meat. So hamburger with taco seasoning and so I'm just going to put that around and I did one pound. So we're doing half of that right now. Okay just a one more spoonful. So I love black olives. Yeah. So we're going to add some black olives around. Just a layer of that. I sauteed up some onions so I'm going to add some onions to this. I think that's good. Just a little bit enough to get some flavor in there. A little bit more. And I cut up one red pepper and sauteed it. So we're going to add that in. Love all the colors to this too. And you could do green pepper or any other cup of pepper. One jalapeno from our garden. So we're just going to put about half of that jalapeno on this layer. There we go. So I'm going to take some of the rounds of the tortilla and then just kind of make a layer with that. Kinda overlapping a little bit. I think this is looking great. One more Monterey Jack cheese. This is actually probably my favorite cheese. I love it. No matter what I'm having. I love Monterey Jack cheese. So just enough to coat the bottom. So I think we should have a little crunch in our upside down taco ring. So I'm going to add some chips in there. Yeah so just a nice layer so when you cut into it or bite into it it's got a little bit of crunch to it. And you could add flavored tortilla chips to this. We've got the nacho cheese or ranch. Any kind of tortillas that you like. But I'm just keeping it kind of simple. Cover that up with another layer of our tortillas. And that one in there. Oh I see that that looks good. I think that looks perfect. Alright. So next up we're going to do cheddar cheese again. So we're almost to the top. So we're almost done. Mhm. I'm not going to be able to make this much taller. Okay. And then a little bit more taco meat. We have that other half of a pound. So this is our last layer. So this'll be great. Yeah this is going to be so good. Okay so I want to add a more a little few a few more veggies to this layer. So I got my plaque olives, my onion, the jalapeno. Okay and I have a little bit more of that Monterey Jack cheese. So I'm going to add that in. We're going to put the last thing on. Oh yeah. Oh my gosh. One more layer. Add here. I'm just going to kind of fold these pieces in. Press them in. Mm yeah that's great. Okay. Hold that in. Alright. Push it in. Oh my gosh. Look at that. Okay guys. 350 degrees for about 45 minutes. And then we're going to flip this upside down. Alright. Our upside down taco ring is done. Nice and crispy. We gotta flip this over. Okay I'm got my plate. Okay, ready, set, Maybe let me see this. Oh my gosh. That is beautiful. Look at that. Oh my gosh. It's so pretty. Okay. Oh you can hear that for those. Perfect. And it's a little hot. Oh my gosh. Yes. Look at that. I can't wait to try that. This is so cool. Alright. Okay, here we go. We're going to go ahead and strain this off. Back in the pan, back on the stove. Now, two to three ounces of your favorite taco season. Add two cans of Rotel. I got one mild and one original. You don't drain the juice off. So, mix it up. Six ounces of velveeta cheese. I like cheese so I'm doing eight. Four ounces of cream cheese. Cook this over low to medium heat till it's all melted. Supposed to get some whole milk too. Around a quarter of a cup. You take the refried beans. Pop em on out my oven set at four00. I forgot to grease my bacon dish. So, Take our mixture. Pop it on our tortilla. Roll it up. I was able to get six of em in there. I grated pepper jack cheese Throw this on top. 15 minutes. Everything's melted. Alright, they're out of the oven. They have cooled off. Let's taste this. Wow. You gotta make these.
