My loaves were: - sticky - hard to work with - didn’t keep shape - flattened out of banneton or during baking - poke test never worked When I started making it less complicated my loaves transformed and my confidence increased. The Secret? ✨ I started watching my

Perform 2-3 more folds every 15-20 minutes as shown in the video, then leave the dough to rise. (If the dough spreads out, you can fold it again without waiting for the full time.) 4. Reheating sourdough! It’s pure magic ✨ credit: @thesourdoughqueen You can’t do this with any other bread. But you can do it with sourdough! If your bread dries out, is rock hard, within 3-5 days of baking, you can just soak it under running water, bake it on a cookie tray at 375 for 15 min and it will be as good as new! I think this is my most fav trick about sourdough. Save this for later and give it a try! Using my @lanongloves heat resistant gloves! They are my fav. Use code QUEEN15 to save $
Top Knot Artisan Bakery on Instagram: "You can learn so much from social media, this technique is one of them. My loaves were shaped very loosely before and would slowly unfold in the fridge overnight leading to a flat loaf in the morning. Doing this stitching technique has helped my loaves hold their shape and create a much better spring and ear. I hope this helps! #sourdough #bread #shaping #themoreyouknow #learningeveryday"
Ailine Liefeld on Instagram: "Prepped a little mini order for a regular customer today as they need bread for a party tomorrow and I’m only doing my normal orders on Saturday this week. Only five loaves which feels so little for a Thursday. ☺️ I’m quite glad though as period pain is real today and I instantly went back to my sofa after finishing those. 😌 What you see here is the final shaping and stitching. Bulk (from adding the starter to pre shaping) was 3h and they went into the fridge at 3.75h right after stitching. It’s summer here so I prefer to do a short bulk and a longer cold proof to get a nice light and well fermented crumb. - - - #cottagebakery #artisanalbread #homebakery #realbread #sourdoughclub #doughtherapy #sourdough #sourdoughbread #sauerteig #sauerteigbrot #baking #igb
