Meyer Lemon Cream Puffs Recipe
First, juice and zest your Lemons!
(if you don't have meyer lemons, you can use regular lemons 😊)
Whisk together lemon zest, lemon juice, sugar, and eggs in a pan on the stove. Cook over low heat whisking constantly until thickened. Add butter pieces a few at a time, continue whisking until melted in.
Keep whisking until the curd is smooth and thick and coats the back of a spoon. Remove from heat immediately.
