I’ve used olive oil in place of butter, all water, all milk, a little honey, a little sugar, and my family’s favorite version for sandwiches is this one, which calls for equal parts by weight milk and water, no sweetener, and melted butter 👍👍 It’s soft and sturdy, nicely sweetened but not sweet at all 🍞🍞 It takes no time to stir together and you can use more or less yeast depending on your time constraints. We’re talking the kind of slow where it takes 3 days at room temperature to make a loaf of bread. When you adapt the recipe to include way more starter, you’ll drastically reduce the time it takes for your bread to ferment.
