Frank Campanella on Instagram: "Creamy Smothered Corn on the Cob 🌽 Ingredients: 4-6 ears of corn (shucked) 1/2 stick butter 3 tbsp flour 2 tbsp minced garlic 1/2 cup heavy cream or milk 1 tbsp old bay 1 tbsp Ranch Seasoning 3 tbsp chopped fresh parsley 3 tbsp grated Parmesan 1. On medium low heat melt the butter and add corn to the pan. Cook for 3 to 5 minutes, then remove the corn and set aside. 2. Add flour to the pan and whisk for about one minute, then add garlic, heavy cream, old bay, ranch seasoning, and parsley. Simmer on low until sauce is thickened. If the sauce is too thick at a little bit more milk or cream. 3. Add the corn back into the pan and continue simmering turning the corn every minute until all sides are well coated, and absorbing the sauce. 4. Top with Parmesa

My baked potato casserole can be made ahead of time and gives all the yummy flavors of a classic baked potato in a side dish! 

Here’s how you make it! ⬇️ 

3 baked Russet Potatoes (You can adjust the recipe for your crowd!)
6 slices cooked bacon crumbled
1 stick of butter
1/2 a cup sour cream
1 1/2 cups cheddar cheese
S&P to taste
Green onion for garnish

1. Start out by baking your potatoes. I use a fork to poke holes in mine and rug with olive oil and S&P. Bake in the oven for a hour at 400 degrees.

2. While your potatoes are baking fry your bacon and crumble.

3. When your potatoes are done dice and move them to a baking dish. I like to leave some of the yummy crispy skin! If that’s not your jam
