Makes about 9–10 cookies

Ingredients:
 • 120g unsalted butter (melted)
 • 100g white sugar
 • 50g brown sugar
 • 2 egg yolks
 • 1 tsp vanilla extract
 • 160g all-purpose flour
 • 1/2 tsp baking soda
 • Pinch of salt
 • Extra sugar for rolling

Instructions:
 1. Melt butter and let it cool slightly (just warm).
 2. Mix in white + brown sugar until smooth.
 3. Add in the egg yolk and vanilla, mix well.
 4. Stir in the flour, baking soda, salt.
 5. Preheat oven to 170°C (up/down).
 6. Scoop into balls (50g each), roll in sugar if you like.
 7.  Chill them for 10 - 15 min in the fridge
