You'll never regret starting little traditions like making Irish soda bread every St. Patric's Day 🍀 Did you know?! Everyone is Irish on St. Patricks Day 😁 INGREDIENTS: 3 1⁄2 cups (448g) all-purpose flour 1⁄3 cup (67g) granulated sugar 2 tsp caraway seeds (optional) 1 tsp baking soda 1 tsp salt 1⁄4 cup (56g) unsalted butter, cold, cut into small cubes 1 1⁄2 cups buttermilk, shaken 1⁄3 cup or more Jameson Irish Whiskey–soaked raisins or currants - soak for an hour (optional), dusted with flour INSTRUCTIONS 1. Preheat the oven to 400°F (200°C). In a large bowl, whisk together the flour, sugar, caraway seeds (if using), baking soda, and salt until combined. 2. To the flour mixture, add the cold cubed butter. With clean hands, work the butter into the flour mixture until the mixture resembles coarse crumbs. 3. Make a well in the center and pour in the buttermilk. Add the Jameson-soaked, flour-coated raisins (if using). Stir all of the ingredients until they come together. 4. Gather the dough and place on a floured work surface. Knead a few times until it comes into a ball. Form into a round loaf that’s about 11⁄2 inches (3.75cm) thick. If the dough is very sticky, mix in a little more flour. Don’t overwork the dough. This is a quick bread. 5. Once the dough comes together, place in a greased 8- or 9-inch (20 or 23cm) round cake pan. Score an X over the top of the loaf (see Babs Says...). Bake for 30 to 35 minutes, or until golden brown. Let rest for 10 minutes, and then transfer to a wire rack to cool. Slice and serve warm or at room temperature. Store tightly wrapped at room temperature for 4 to 5 days or freeze, tightly wrapped in plastic wrap in a freezer bag, for up to 3 months #happystpatricksday☘️ | Brunch with babs | Facebook
