Italian Chicken & Rice Casserole
Ingredients:
4 chicken breasts, seasoned with salt and pepper
1 cup long-grain rice
2 cups chicken broth
2 cups fresh spinach
1/2 cup sun-dried tomatoes, chopped
1 cup grated Parmesan cheese
1 small onion, diced
2 garlic cloves, minced
Instructions:
Preheat oven to 375°F (190°C). In a baking dish, spread rice and pour chicken broth over it. Add spinach, sun-dried tomatoes, onion, and garlic. Place seasoned chicken breasts on top. Sprinkle with Parmesan cheese. Cover with foil and bake for 30 minutes. Remove foil and bake another 15 minutes until the chicken is cooked and cheese is golden. Serve hot.
