Pineapple Cowboy Candy
Fresh pineapple, diced -3 c Jalapeño peppers, thinly sliced - 1 c Apple cider vinegar -1 c Granulated sugar -2 c Lemon juice - 2 TBSP Mustard seeds - 1 TSP Turmeric powder - 1/2 TSP Ginger, grated (1 tablespoon) Garlic, finely chopped (2 cloves) Combine vinegar, sugar, lemon juice, mustard seeds, turmeric, ginger, & garlic. Bring to a boil, reduce heat & simmer until the sugar is dissolved. Add pineapple & jalapeño to saucepan. Simmer over medium heat until pineapple is tender & liquid becomes syrupy, about 20 minutes. Sterilize jars & lids in boiling water for at least 5 min. Carefully ladle hot jelly mixture into sterilized jars, leaving about 1/4 inch headspace. Wipe the rims, fix the lids, and process in boiling water bath for 10 min. Remove the jars and let them cool completely.
