Perfect for this warm weather and if you love coffee you will LOVE these cinnamon rolls! #deats Coffee dough: 500g all purpose flour 10g instant yeast 75g brown sugar 1 tsp cinnamon 5g salt 200ml espresso (warm) 80ml milk 40g unsalted butter (room temp) 1 large egg 2 tsp vanilla filling: 80g unsalted butter 2 tsp cinnamon 1 tbsp unsweetened dutch processed cocoa powder 2 tbsp brown sugar 2 tbsp granulated sugar 1 tsp instant coffee 60g chopped dark chocolate -( to put on top of the filling) glaze: 150g powdered sugar 1 tsp instant espresso (dissolved in 1 tbsp hot water) 2-4 tbsp heavy cream (add accordingly! If you want it more thinner add more) In a standmixer, Add in the flour, instant yeast, brown sugar, cinnamon, salt, espresso, milk, egg, vanilla extract, and the unsalted butter. Use a dough hook attachment and mix on medium speed. Mix until a dough forms and it isn’t too sticky anymore. It should barely stick to the bowl. Grease a bowl gently and add the dough in. Place in a warm environment covered for 1 hour. While its rising, make the filling. In a bowl, add the softened butter, sugars, cinnamon, cocoa powder, and instant coffee. Mix until a paste forms. After 1 hour, sprinkle the surface with some flour and roll out the dough into a large rectangle. Spread the paste all over the dough and then add chopped dark chocolate on top Roll the dough starting from the short side tightly. You can cut them in 8-10 pieces. I did 8 big ones. Grease a 9x13 pan and place the rolls! I did 6 rolls in mine and 2 others in a different pan. Let it rise covered for another 20 min. Preheat oven to 350f and put the rolls in the oven and bake for 25 minutes! While the rolls are baking, make the glaze. Sift the powdered sugar into a bowl and add in the espresso mixed with hot water. Add in the heavy cream and thin out the glaze. Pour the glaze on the rolls when they come right out of the oven!
