Ingredients for 3 servings: 1 large sweet potato (14 oz / 400g) 1 tbsp olive oil salt, pepper 1 lbs ground beef taco seasoning 1 can (7 oz/ 200g) black beans shredded cheese (1 oz / 30g) jalapeños other toppings: fresh cilantro, the more the better 😊 Pico de Gallo or salsa sour cream If you make your Pico de Gallo from scratch, you need: 2-3 tomatoes 1/2 onion 1 jalapeno pepper salt fresh lime juice CILANTRO 😊 Cut the sweet potato into even slices.
