They’re so incredibly easy to meal prep for lunch, just add the ingredients to a jar and then add boiling water before serving. 🥹 It’s such a nourishing lunch (or even dinner), it’s comforting and delicious and is packed with plant-based protein 💪🏼 Recipe (makes 2 servings) For the sauce: - 40g Peanut Butter - 2 tbsp Honey or Agave - 2 tbsp Soy Sauce - 1/2 tsp Chilli Flakes - 1 tbsp Vinegar (or juice of 1 lime) Other: - 200-300g Tofu - 160g Edamame (I use frozen and thaw them in boiling water) - 1 large Carrot - 2 nests instant Vermicelli Rice Noodles (around 100g) - Handful Coriander 1. Combine sauce ingredients and divide between two jars. 2. Cut tofu into bit-sized pieces and add to the jars along with edamame, dry vermicelli noodles. Sliced carrots and some coriander. 3. Close jars and keep in the fridge. 4. Top with boiling water before serving. 5.
