So for that I am going to dry roast certain spices starting with two table spoons of coriander seeds, one teaspoon of cumin seeds, 8 bay leaves, 15 dry red chillies, Now let's roast these spices till they give out their fragrance. The spices have released an amazing aroma. To this let's add a teaspoon of fennel seeds. And roast it for a few seconds more. And now let's remove this in a blender. Now let's roast the next batch of spices. We are going to take four star anise. Half of a nutmeg, two black cardamoms, two whole mace, 15 cloves, a teaspoon of black peppercorns, 15 green cardamoms, and two inches of cinnamon, Now let's roast this. I am roasting everything on a very low flame. These spices have also released an amazing aroma. Let's shut the flame, add these spices to the rest of the spices that we have roasted earlier and let's cool this for a few minutes. The spices have cooled down. Let's grind them to a nice fine powder. Let's remove this fragrant Biryanika masala in a bowl. So that we can add the rest of the ingredients, mix it well. To the spice powder, I am going to add/ 2 a teaspoon of turmeric powder, a table spoon of red chilli powder, seven to eight cloves and ten green cardamoms and here I have dried plums about ten of them. This is optional. This actually gives the Biryani a fantastic flavour. You can add these as well. Just mix all these ingredients together. And once this is completely cool down, I am going to store this in an air tight jar and I am going to use it as and when required. You can use it to make various different types of biryanis with the choice of the meats that you like. So do try this recipe.

Layer half of the cooked rice on top of mutton gravy. Again add in few fried onion, green chillies & coriander leaves & remaining of the mutton gravy, layer the remaining rice on top, add in food color along with ghee, then seal the pot & place a tawa below the pot, cook on high flame for 5-7mins & then lower the flame & cook on dum for 20-25 mins, switch off the flame & let it stay like that for 10mins before opening the pot. Mix in all those beautiful layers, serve with raita & enjoy 🙃 . . . . . Marinate for 30 minutes. - taste the marinade and understand if more spices need to be added. If needed adjust the ingredients to fit your taste. Cook chicken Boil basmati rice with whole spices, ghee, lemon slices, and chopped coriander-mint leaves & salt.Cook until 80% done, then drain and keep aside. Make sure to add enough salt to the boiling water before adding rice. In a heavy bottom pot, layer the cooked chicken and rice alternately (chicken, rice, chicken, rice). I too love it but the frying part is the toughest and it kills the appetite (Atleast for me) plus lot of oil that gets used which can be avoided I tried roasting /baking onions and they turned out fantastic! And no trace of oil. Just as how shared in this reel If you are concerned about usage of power, then you certainly have the option to fry or as whatever suits you. I am glad that I could get no oil birista and that really matters in my biryani making process Every oven works differently so what I am sharing might be different result for you in terms of time and browning. You can toss the onions more than once just to get even browning. Few bits and pieces that might be still moist and not browned, can be put back in the oven while it’s switched off.
