Ingredients For the batter: 100 g all-purpose flour 50 g cornstarch 300 ml water 1/2 teaspoon salt For the filling: 2 eggs 1 carrot (grated) A few salad leaves (or watercress) Soy sauce or chili sauce (to taste) Chopped green onions (optional) Instructions Prepare the batter: In a bowl, mix flour, cornstarch, salt, and water until smooth. Cook the pancake: Heat a non-stick pan over medium heat and add a little oil. Pour a ladle of batter into the pan and spread it into a thin circle. Cook until bubbles appear, then crack an egg on top and spread it gently. Add the fillings: Sprinkle with grated carrots and salad. Add chopped green onions and season with soy sauce or chili as desired. Roll and serve: Fold the pancake in half or roll it up, and serve hot.
