Yaashvan - Creamy Cinnamon Rice Pudding 🍦🍚 Ingredients: 1/2 cup uncooked medium or long-grain white rice 1/2 cup water 1/4 tsp salt 4 cups milk (whole milk preferred for creaminess) 1/2 cup sugar 1/2 cup raisins (optional but classic!) 1/2 tsp ground cinnamon (plus extra for garnish) 1 tsp vanilla extract Optional topping: scoop of vanilla ice cream or whipped cream Instructions: Start the Base: In a medium heavy-bottomed saucepan, add the rice, water, and salt. Bring to a simmer over medium heat, then reduce heat to low, cover, and cook for about 10 minutes until the rice has absorbed the water. Add the Milk & Simmer: Stir in the milk and sugar. Bring to a gentle simmer (not a boil!) over medium-low heat, stirring frequently to avoid sticking. Slow Cook Until Creamy: Simmer uncovered for 30–35 minutes, stirring occasionally, until the rice is tender and the pudding has thickened into a creamy consistency. If it gets too thick, add a splash more milk. Flavor & Finish: Stir in cinnamon, vanilla extract, and raisins (if using). Let it simmer 1–2 more minutes, then remove from heat. Serve Warm or Cold: Enjoy warm straight from the pot, or chill in the fridge and serve cold later. Top with a dusting of cinnamon and a scoop of vanilla ice cream if you’re feelin’ extra cozy!
