Incredibly Moist Apple Bread - I was first introduced to this wonderful Apple Bread from a co-worker more than 20 years ago! I just recently begged her to bring me the recipe so I could make it. She said she has kept it "posted" on her refrigerator for all of these years and still makes it all the time. I hope you enjoy it as much as I do.
Baked Apples with Oatmeal Streusel Topping
Baked Apples w/Oatmeal Streusel Topping - a little over 1/4 cup melted butter +1/2 cup oats +1/2 cup flour +1/2 cup brown sugar +1 tsp cinnamon +pinch of ground ginger & salt. Fill & top apple halves w/mixture. Bake at 350 F until tops are golden brown & apples swell (about 30 minutes).
Freezing Apples - and what the old folks taught me
Place one cup warm water in a large bowl. Stir in salt until dissolved. Add remaining water cold. Peel and slice apples (can leave skin on them if desired). Place each slice in salt water as you go along. When done with all apples, stir water a bit to make sure all have been submerged. Drain in a colander. Place immediately in freezer bags, label, and freeze.
