• 2 Bay leaves, dry
• 2 Carrots
• 2 Celery stalks
• 1 good pinch Chilli flakes
• 4 Garlic cloves
• 1 Onion, medium
• 300 g Oyster mushrooms
• 2 sprigs Rosemary
• 4 Thyme, sprigs
• 1 Thyme or parsley, fresh
• 360 ml Tomato passata
Canned Goods
• 6 tsp Tomato paste / concentrate / puree
Condiments
• 30 ml Soy sauce
Pasta & Grains
• 500 g Tagliatelle, dry
Baking & Spices
• 1 tbsp Nutritional yeast
• 2 tsp Paprika, smoked
• 1 Salt and black pepper
• 1 tsp Sugar
Oils & Vinegars
• 45 ml Olive oil
Nuts & Seeds
• 1/4 tsp Cumin, ground
• 50 g Walnuts
Dairy
• 1 Parmesan, homemade vegan
Beer, Wine & Liquor
• 180 ml Red wine, vegan
Other
• 15 g 1/3 oz dried porcini (optional) or mushroom stock cube
