MUFFIN BATTER
* 1 3/4 cups all purpose flour
• * 1 tablespoon pumpkin pie spice
• * 1 teaspoon baking soda
• * 1/2 teaspoon salt
• * 1 cup honey, or maple syrup or granulated sugar
• * 1 cup packed brown sugar, or coconut brown sugar
• * 1 (15 oz) can pumpkin (pure pumpkin puree)
• * 2 large eggs
• * 1/2 cup coconut oil, or vegetable oil
* 1 tablespoon vanilla extract
CREAM CHEESE FROSTING
* 8 oz cream cheese
• * 1 tablespoon honey, or sugar
* 1/2 tablespoon vanilla extract
