Ingredients: 1 tbsp olive oil, 1 small white onion (diced), 1 medium jalapeño (diced), 1½ lbs lean ground beef, 1 packet taco seasoning, 1 cup salsa, 2 cups Minute Rice, 2 cups water, 1 cup shredded cheddar cheese. Instructions: Heat olive oil in a skillet and sauté onion and jalapeño until softened. Add ground beef, cooking until browned; drain if needed. Stir in taco seasoning, salsa, rice, and water. Simmer, cover, and cook for 5 mins until rice softens. Mix in cheddar cheese until melted. Serve with sour cream, diced tomatoes, avocado, or cilantro.
