Spanakopita Cookies (Spinach and Feta Cookies)
Introducing my Galaktoboureko Croissant Bake: a delicious twist on a Greek classic! Flaky croissants filled with creamy custard, baked until golden, and... | By Dimitra's Dishes | I've had croissant bread pudding and French toast but this calacto burrito filled croissant bake is next level. You can make this for a Mother's Day brunch or serve it for a dessert at your next dinner party. Let's get started by making the custard. Add milk and sugar to a saucepan with a little pinch of salt and bring it to a boil or until it's nice and scalding hot. In a pitcher, you're going to combine your eggs and egg yolks, semolina flour, cornstarch, and whisk that all up until it's nice and smooth. Add the hot milk to temper the eggs and put everything back into the saucepan At this point, you could just zest in an orange or a lemon. Return this to the heat and cook it until it's nice and thick. As soon as it boils, it's ready. Take it off of the heat and stir in some vanilla extract and then you're going to make the syrup which is so easy to make. You're just going to combine sugar, water, a cinnamon stick, the juice of the orange. Bring that all to a boil and then take it off of the heat and stir in some vanilla extract to assemble the croissants. It's so easy. Just grease a nine by 13 inch baking pan. Cut the croissants in half. This is the best time to use those old store-bought croissants. We're going to bring them back to life and they're going to taste delicious. We're going to fill them with that custard that we just made. Top it off with some frozen or fresh blueberries and this is going to bake until it's nice and golden and crisp on top for 30 minutes. Once it comes out of the oven, pour that syrup on top. I also like to garnish it with some crushed pistachios. Let this sit until that all of that syrup is absorbed and once you bite into it, it taste like heaven.
