Kid-Friendly Recipes
Vegetable oil spray
1lb broccoli, cooked, drained, and chopped (I am using fresh but frozen works)
1 cup cooked quinoa (use stock for extra flavor)
1 cup Seasoned bread crumbs (I use a GF equivalent)
1 ½ cups Shredded cheddar cheese
3 Large eggs (I am using chia seeds let me know if you have questions about them)
Heat oven to 375
Mix all ingredients and shape into nuggets and bake 20-25 minutes. Turn halfway. You can coat them some kind of breading if you want but I don't think that will be necessary.
