Ingredients: -1 cup low fat cottage cheese -½ cup fat free shredded cheddar cheese -4 oz cooked ground beef (I used 96/4) -¼ cup diced red or white onion -¼ cup corn -¼ cup black beans -basics: 1 tsp garlic powder, 1 tsp onion powder, 1 tsp chili powder, 1 tsp cumin, salt Instructions: -Blend cottage cheese, cheddar cheese and seasonings together until smooth (you can add milk or water to adjust consistency). -Meanwhile, add corn, beans and red onions to a nonstick skillet and cook until tender. -Add veggies and ground beef to queso, mix and microwave in 15-30 second intervals in microwave-safe bowl until warm.
