Ingredients: 4 lobster tails (5-6 oz each) 1 tbsp parsley, chopped 2 garlic cloves, pressed 1 tsp dijon mustard ¼ tsp salt ⅛ tsp black pepper 1½ tbsp olive oil 1½ tbsp lemon juice 4 tbsp unsalted butter, divided Instructions: Preheat oven to broil. Butterfly lobster tails and place in a roasting pan. Mix parsley, garlic, dijon, salt, pepper, olive oil, and lemon juice. Spread over lobster. Dot each tail with butter and broil for 10-11 minutes, until meat is opaque. Simmer remaining butter with pan drippings for dipping sauce.
