Ingredients (serves 2) 
1 onion (red or white) - finely sliced 
1 red pepper - finely sliced 
2 chicken breasts - sliced (or you could use beef, prawns or beans) 
2-3 tbsp of fajita spice mix (I’ve used @capaicana chipotle fajita mix but you could use a mix of cumin, coriander, smoked paprika, oregano) 
4 large tortilla wraps (I love @missionwrapsuk_ )
50g cheddar - grated 
10g fresh coriander 
50ml olive oil - to brush over 

Method: 
Start by browning the chicken then add the onions & peppers followed by the spices and fry off for 5 mins. 
Set that side while you arrange the tortillas onto a baking tray. Make sure they are overlapping by an inch.
