We did a little staycation at our favorite @hilton property, and the staff always works so hard and takes such good care of us. They have a beautiful @webergrills Genesis on property so I like to cook for the staff as a way of showing our appreciation to them. Take the rolls out of the tray and form your ground beef into the shape of the tray. I used 1.5 lbs of @k4gourmetbeef Get your onions started before adding beef to flame. Grease up a small cast iron with bacon fat. Add 2 cups diced sweet onions and let the soften up. Then add 2 oz of @trybachans Honey Sweet Japanese BBQ Sauce. Let them caramelize up while your burgers cook. Add your tray shaped beef to the fire on medium heat. Dust it up with SPG and when they start to sweat on top it’s time to flip em over. This is a gentle technique and requires and large spatula. Once flipped add your cheese to the top. After 4-5 min lay your roll tops on top and turn your heat down to low. Spread your onions on the bottom rolls and then I hit it with some honey habanero mustard for a bit of kick. Build on top of that and cut em up into sliders!
