1 lb cooked chicken breast shredded 2 tbsp olive oil 1 onion, chopped 3 cloves garlic, minced 3 carrots, sliced 2 celery stalks sliced 3 medium potatoes, cubed 1 cup frozen peas 4 cups chicken broth 1 cup water 2 tbsp tomato paste 1 tsp dried thyme 1 tsp dried rosemary In a large pot, heat olive oil over medium heat. Add chopped onion and celery cook until soft, about 5 minutes. Add garlic and cook for another minute until fragrant. Add carrots, potatoes, chicken broth, and water. Stir in tomato paste, thyme, rosemary, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 -30 minutes, or until the vegetables are tender. Stir in shredded chicken and frozen peas. Let simmer another 15-20 mins
