• 3 tbsp Matcha
• 1/2 Red onion

• 1 Egg yolk
Condiments
• 1 Lemon, juice only
• 2 tsp Miso paste
• 10 g White miso
Pasta & Grains
• 30 g Rice
Baking & Spices
• 1 Black pepper to season
• 15 g Caster sugar
• 1 handful Coriander seeds
• 100 g Gochujang
• 1 Salt to season
• 20 g Sea salt
Oils & Vinegars
• 1 dash Olive oil
• 20 ml Rice vinegar
• 1 tbsp Vegetable oil
Beer, Wine & Liquor
• 10 ml Sake
