Xueci on Instagram: "Chinese steamed eggs丨蒸蛋 Steamed egg goes by many names in Chinese, such as zheng dan (蒸蛋), dun dan (炖蛋), or zheng shui dan (蒸水蛋), depending on where you’re from. Almost every household makes it. It was my waipo’s go-to healthy night snack (yexiao, 夜宵) for a hungry teenager like me, but also a popular side dish in Sichuan noodle eateries when topped with braised pork mince. A dish I grew up eating but don’t cook enough in my Berlin home now. Full recipe and tips will be in my newsletter! Ingredients: 2 eggs (about 100g) 200g water (40-60ºC) 1/8 tsp salt 1/4 tsp chicken bouillon powder (optional) Toppings and seasoning: soy sauce, sesame oil, scallion, braised minced pork (recipe in my newsletter too) #chinesefood #egg #chinesefood"

#cuisinejaponaise #recettefacile #oeufmollet #ramen #inspirationcuisine | Margaux 🤍

Michael Tchao on Instagram: "PERFECT RAMEN EGGS! [👇🏼RECIPE] This recipe has 3 ingredients, but one of them is MIRIN. It is a sweet rice wine, and is a staple in Japanese cooking. It’s one of the key players in teriyaki sauce. You can find this in most grocery stores in the Asian aisle. Key takeaways: -soft boiled eggs can be hit-or-miss when peeling, puncturing the flatter side of the egg makes it easier, and prevents the peeled egg from having that dimple/flat side -boil on high for 6.5 minutes then immediately transfer to an ice bath to stop the cooking process -find the smallest container to contain the eggs. This way you can minimize the amount of marinade. If the container is too big, the eggs might not be fully submerged -the egg in this video was marinading for 24 hrs. 48 hrs is
